Dr. Soumela Chatzianthoniou has been a member of the Laboratory Teaching Staff (EDIP) of the Department of Supply Chain Management at the International Hellenic University (IHU) since 2016. She graduated as a Food Technologist (former ATEI of Thessaloniki) in 2002, completed postgraduate studies in Food Science and Nutrition with a specialisation in Quality Assurance (University of Ioannina – ATEI of Thessaloniki) in 2006, and obtained her PhD in Food Chemistry and Technology from the University of Ioannina in 2020. She has professional experience with Food Safety Management Systems in the food industry, in organising Quality Control Laboratories, and as a laboratory associate at the International Hellenic University. She has collaborated with various research groups on projects related to Food Science and New Product Research & Development. Her research has addressed environmental sustainability challenges, focusing primarily on novel eco-friendly analytical techniques for monitoring food traceability, the valorisation of underutilised foods or plant- and animal-origin bio-waste, and the development of new value-added products from food-processing by-products. She holds one patent and has authored a number of scientific publications, including peer-reviewed journal articles, peer-reviewed international conference papers, and book chapters.
